Gourmet Chicken Recipe from the Birthday Dinner (March Enrichment)

Many of you loved the chicken served at the Relief Society Birthday dinner in March so much, you requested the recipe. Here it is! (Better late than never, right?)


Gourmet Chicken Recipe
   
6 - Boneless skinless chicken breasts (cut in half to   
      make 12 pieces)
¾ C flour
Salt, Pepper & Thyme seasoning
½C - Sliced Mushrooms (optional)
1½ - green onions – cut up
½ Tbsp dried parsley
3 Tbsp slivered almonds
1 Can cream of chicken soup
1 Cup sparkling cider (or ¼ C juice concentrate & ¾ c soda water)
3 Tbsp sour cream
½ stick butter (4 Tbsp)
   
Lightly flour each chicken piece. Brown floured chicken in oil in heavy frying pan. Shake on some salt, pepper and thyme. Put the browned chicken pieces in a baking pan.
   
Do not clean frying pan after you remove the chicken. Melt the butter in the pan and then Sauté the mushrooms, green onions, parsley and slivered almonds. Spread over chicken.
   
In the same pan, mix and warm up the cream of chicken soup, sparkling cider and the sour cream. Do not boil. Pour that over the chicken. Cover with foil and bake at 350 for 1-1½ hours until done.
